Ingredients

  • 1 tablespoon sunflower oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 2 cups quinoa
  • 3 tablespoons minced preserved lemon
  • 3 cups vegetable broth
  • 1⁄4 cup freshly squeezed lemon juice

Method

Step 1

Heat sunflower oil in a medium pot. Add smoked paprika, black pepper, nutmeg, cumin, cinnamon, and cloves. Sauté for 1 minute.

Step 2

Add quinoa and toast for 2 to 3 minutes.

Step 3

Stir in preserved lemon, broth, and lemon juice. Bring to a boil.

Step 4

Reduce heat to low, cover, and simmer for 12 to 15 minutes until quinoa is cooked.
